Week 9- Pâtisserie
Well what a series this has been! So difficult to predict, nobody winning an episode more than once all the way up to week 8, bakers staying in one week by the skin of their teeth only to be star or close to it the following week. Or going the other way, falling from grace quite swiftly, and in the case of Lottie during the middle of the competition both. Laura has followed a similar trajectory- surprising almost everyone to win Pastry Week, then having to save herself with a showstopper twice in a row, then being unlucky not to win last week.
All of which means that not only has it been difficult to say what will happen, players on the site have often have switched allegiance from one baker to another and also that minus points have abounded as previous strugglers have triumphed the next time out and favourites have gone. And once again we see it here, Peter having been consistently the favourite to be Star for weeks, and by increasingly greater percentages, is usurped this week in the nominations by Hermine. After a double win for Hermine and Peter nearly going out in Dessert Week Hermine is heavy favourite here, and the patisserie theme evidently influenced a lot of people to go for the baker with the French background.
Those that have for weeks stuck with Laura to go had the familiar feeling of seeing her go into the last round looking doomed only to escape again, but the stats this week also show how few people expected Hermine to leave. A reasonable technical wasn’t enough to save her and I think it was completely fair as Laura did have a better signature and despite the glaze not working, the taste of her mini cakes was praised, in contrast to Hermine’s which was criticised on a number of points. Hermine didn’t help herself by apparently settling on a recipe the day before the bake but even so it’s such a surprise. Hermine seemed to be hitting her stride just at the time, as series winners often do but it was not to be. I had her for the final as well!
UPDATE: There has been a lot of criticism on social media of the decision to send Hermine home and retain Laura, even to the extent that Laura has received abuse. I really despair of some people sometimes. I can’t fathom why anyone would find it acceptable to abuse someone else over events in a TV show, never mind the fact that that was not even Laura’s decision! Moreover, even on the facts as they are, the thrust of a lot of the complaints is wrong As Paul Hollywood has pointed out, the decision over who leaves is on how they have performed in that particular episode. When the judges cannot separate two or more bakers on that basis, it does perhaps then come down to prior performance but otherwise it goes on that episode only and not who has generally been better. This has always been the case.
At the other end of things, in hindsight it seems almost preordained that Peter would bounce back after last week’s scare for him and after his Hollywood Handshake in signature, it felt to me that he would just cruise to the win this week. So well done to those of you who kept the faith with him, I must confess I jumped ship to Hermine along with so many others! So who will triumph? It really could be anyone at this point. Dave had a pretty good week and Laura could come back with another stormer so take your pick for next week!

Week 6 – Japanese
A new theme here, and quite an interesting one. I know there has been some criticism that some of the challenges were not specifically Japanese (and some of the bakers probably didn’t help this perception with some of the flavours used)and certainly care should have been taken with this. The challenges however were all good tests. Again Peter is so good in the technical but Lottie wows the judges with her kawaii cake and deservedly wins Star. Having won last week Laura escapes with a bad week, partly because Mark manages to stitch himself up by asking the judges to taste another part of his cake in the hope that it is better baked. Instead it is pronounced almost inedible by Paul Hollywood and he is done for. Matt Lucas said as he announced Mark to leave that he would be missed and there was barely a dry eye in the tent as Mark said his goodbyes.

Week 5 – Pastry
Another classic for signature this week, the pasty! In an unpredictable series it’s getting harder to choose with any confidence who will do well or badly. Linda was strong favourite amongst Fantasy Bake Off players to go last week, but winning Technical for the second time in a row and having a generally good Chocolate Week has seen her become second favourite for Best Baker very closely behind Peter. At the other end Lottie is favourite to leave, followed by Laura. Laura has a good signature round with her leek and potato pasties. She had promised that they’d be “Proper tasty” and that seems to be the opinion of the judges (having made these a couple of days later I certainly agree!). I’m not sure why Linda thought making a samosa was a good idea and it turns out she missed the brief about crimping. Elsewhere in the judging it looks like everyone is so frightened of the notorious soggy bottom that they’ve not put enough moisture in the pasties, and a common complaint is that they are too dry. My complaint is that their caution has denied the bonus happening!
On to the technical and another bake everyone will have tasted, eclairs! It seems that the vague recipe directions have caused problems for a number of the bakers as a lot of them have difficulty with the crème patissiere, it’s either too runny, or doesn’t fill the éclair or both. Linda’s good run in the technical comes to an emphatic end. Unfortunately, not remembering how to make choux pastry was her downfall in this round.
And to finish off it’s a caged tart. Who knew this was a thing? What’s the point of putting a tart in a cage? As some of the bakers said, why hide the tart away? As Hermine said, “it’s bonkers”. As for the baking, when your luck is out, it’s out and Linda’s cage comes apart on the bowl she’s using to shape it. No surprise that she is the one to leave, and no surprise given how it’s gone that Laura is the star this week, but it represents a big improvement in form for her compared to last couple of weeks. With Linda gone and Laura winning this week, who will be favourite to leave in Japanese Week?

Week 4 – Chocolate
Hooray for the welcome return of chocolate week after an absence of many years and what a great challenge to kick off with! It’s brownies in the signature- most people will have had them at some point so almost everyone knows how they should look and taste, but baking them comes with the jeopardy of getting the centre gooey but sufficiently baked. Pru warns against over complicating them or making them too sweet by adding too many extras and this is indeed the pitfall the does for a lot of the bakers.
Nobody has a brilliant round, Laura comes out with the understatement of the week prior to judging. On cutting into her brownies and seeing most of it splurge across the tray: “Paul’s going to say probably now that they’re not quite right”. Precisely no jaws hit the floor when they are held to be under baked, in addition to being too sweet and “a mess”. But she’s far from being alone, a number are too messy, Lottie is told by Paul that hers “Look like they’ve been dropped” Sura only presents half of hers and those are overbaked. Dave’s brownies taste good but are considered too dry and are labelled by Pru “A tray bake”. Mark’s are good but they aren’t sure about his biscuit base. It’s really surprising that of eight great bakers none of them turned out an excellent brownie. As Lottie says they all tried to do too much where simplicity would have won the day.
Technical is a babka, executed with varying degrees of success. Linda looks very comfortable yet again and proves last week was no fluke by coming first in technical again. There’ll be a few nervous people now as Linda was the favourite on our site to leave, with nearly 40% of players (yours truly included) thinking she’ll go and thus in line for a minus point! Lottie comes last and must be in danger along with Sura who came seventh. Those two were the two most popular bakers on the site to win this week so there could be a fair number of minus points at the other end as well- what a topsy turvy competition this has been so far!
White chocolate celebration cakes are the show stoppers. A fair bit of tempering but nobody has to redo it (bonus denied!), Sura comes closest as she abandons hers but has no time to start again. A couple of interesting things I learnt during this round, one was that they seem to give the bakers advance notice of the bakes in all the weeks, as when Paul pointed out to Peter that his brother wouldn’t be able to taste the graduation cake Peter was making for him, Peter replied that he had tasted some when Peter had been practising at home, so presumably before the series even began! I wonder if they normally do that or if it’s just because they wouldn’t get the change to practice in the comfort of their own kitchens once on the show and in the Bake Off bubble? The other interesting thing is that white chocolate’s high sugar content makes the cake brown more quickly, with the potential to deceive a baker into thinking it’s baked when it isn’t and sadly it’s Sura that is shown falling into this very trap moments later taking hers out of the oven because the colour looked good. Her cake is mostly raw when cut into and it’s clear her time is up. I had her for the final as well! Less obvious is who will win this week. Mark did well but his cake “lacked oomph”, Peter’s found favour and Linda’s tasted great although they didn’t like the piping. In the pre-decision chat I’m amazed that Linda is not mentioned as a contender for star since she won technical and must have been in the top three in each of the other two rounds. Mark gets the nod in another week where nobody had a perfect run. Sura makes her inevitable exit in the biggest shock yet as she’s been so solid up to now. Next week it’s pastry!

Week 3 – Bread
So Bread Week is once again in its established place in week 3. It is fair to say that not everyone shares the Hollywood enthusiasm for the soda bread round. Noel claims that no one under the age of forty eats bread, Lottie, as dry as ever says “Who makes sweet soda bread, what is that?” and Laura questions the point of having to make their own butter. It’s all enough to get Paul Hollywood grinding his teeth.
A bit of a mixed bag in the judging but Hermine’s soda breads earn her a Hollywood Handshake! I must confess I thought her salmon and cheese savoury bread was asking for trouble because it might be too wet in the bread (and she certainly didn’t seem that confident about it either), plus not everyone approves of the fish-and-cheese combination, but the judges seem seriously impressed. Soaking the fruit in booze for her sweet bake for two weeks clearly didn’t hurt either!
On to the technical, and it’s rainbow bagels, something that none of the contestants have heard of. Having to colour and prove 5 separate pieces of dough in order to create the rainbow, there’s plenty of scope for the bakers to bungle. A lot of bakers seem unsure of exactly what to and some are making a lot of multicoloured mess on their benches in the process. Hermine is unsure of how they should look and when Noel suggests she looks at the bagels of the others for a guide, she replies “Theirs don’t look terribly good either,” and by George she’s right! Having had a go at these later I can report that life is too short to colour bread dough and it’s easy to fall foul of the pitfalls flagged up by Mr Hollywood. A lot of them are flat, wrinkly or bloated, either because of over proving or leaving them too long in the boiling water. You should be zippy in poaching them but evidently that’s not consistently the case in the tent right now. Hermine is similarly forthright in questioning the process- “We’re in 2020, who kneads dough by hand?“ To that I must say, me Hermine! Form a relationship with your dough!
There are a couple of bakers who seem to be handling the challenge well though, Linda’s bagels look good all the way along and Marc seems on top of things too. And so it comes to pass, judging is done among a haze of colours and Linda comes first, with Marc second. Rowan once again comes bottom and once again is in trouble. What’s more surprising is that he’s joined in the relegation zone by last week’s winner Dave.
In the final round it’s about decorative bread plaques depicting what the bakers are grateful for and it’s interesting to hear the different bakers’ stories behind the inspiration for their bakes. Marc movingly talks about how a book on Buddhism helped him when he lost his leg and Linda’s memories of spending time on a farm milking cows in her youth are heart warming, as are those of Sura of picking tomatoes from her mother’s plant in their flat growing up. Again however, not many of the bakes hit the heights. Hermine’s risk in making brioche doesn’t come off and her bread is deemed underproved. Peter who has been strong in the previous two weeks is told off for having bread that bends and tastes of leather. Marc’s is the best received but even he gets some critical comments. This time Rowan’s bake is one of the better looking ones but the taste of the bake doesn’t match the style. Having used his get-out-of-jail card last week Rowan’s time is up. Lots of people are getting points this week on the back of that! Marc gets the nod for being the best baker this week, but faults were found in all his bakes so nobody had a perfect couple of days. The remaining bakers look relieved to have got through Bread Week and the extra scrutiny they felt. Next week, chocolate! Who will keep their temper?

Week 2 – Biscuits
Week 2 and we should see the bakers settling in and the most promising contenders for the competition starting to establish themselves. Florentines kicks off Biscuit Week and most of the bakers seem up for the challenge. By the end of the round we get a couple of firsts for Bake Off 2020. We have the first innuendo of the series with Pru confessing to Mark that having seen him chop his ingredients quite coarsely, she had been “worrying a bit about your very large nuts”, to the laughter of all the contestants, hosts and from the sound of it, most of the film crew. This is followed by the first Hollywood handshake this year, to Lottie! Pronouncing her cherry ginger and chocolate Florentines “Without fault”, the bearded one turns over a few just to check there are no substandard ones, finds them all perfect, hesitates, and extends his hand. Well done!
Other bakers judged to have done well in signature are Dave, who is told he has achieved a good snap (Bonus!) and a good flavour and reigning champion Peter, for his clever sticky toffee pudding
The technical is macaroons, 6 chocolate, six mango. Mak is a cook after my own heart, makes a mess on his bench, getting mango curd all over the recipe sheet, and loves to eat condensed milk, which he admits, to the disgust of Matt Lucas. You don’t know what you’re missing Matt! Ah,childhood memories of going into the fridge and eating it out of the open tin with a spoon…
But I’ll forgive Matt Lucas that lack of taste because of the hilarious spot of cruelty shortly afterwards. He shocks the bakers when giving them a time check on 15 minutes to go. “Bakers you have 5 minutes!…….” – cue eyes like saucers among the bakers “…until we tell you you have 10 minutes….You have 15 minutes.” Lucas, you evil comedy genius you!
At the macaroon judging the main criticism is that some have been underbaked, in particular those of Rowan who admits “They did look slightly like the cat’s lavatory”. Most of the bakers end up making a decent fist of their macaroons, with the top three of Dave, Mark and Mak all being praised for their offerings.
Show stopper is a biscuit dough sculpture of a table setting of the bakers’ most memorable meals. Not just a question of assembling biscuits, this dinner setting “Must be moulded” (Paul) to show that the bakers can “Use the dough like clay” (Pru)
The various interpretations of this take us all over the place, from Scotland and Amsterdam all the way to Ethiopia, Mexico and back to Viking times. Mak heads to India with his tea set but departs from the others by making his table setting square.
At the judging table the bakes of Marc and Peter are well received and Dave’s taco setting wows Pru and Paul. Rowan “Tastes like rubber” they’re underwhelmed by Laura’s and are unconvinced enough work has go into it and Mak is admonished for going flat rather than moulding, resulting in a “clumsy” look.
Interviewed after the judging, but before the verdict Rowan and Mak are said by Pru & Paul to be in trouble and it’s difficult to separate them, but surely there’s only one in the frame and they are just trying to cast doubt on it for a bit of excitement?
Unsurprisingly with a good first bake, top place in technical and a brilliant biscuit sculpture, Dave is the star this week. And going home is… Makbul?? My first reaction to this is “Rowan’s had a nightmare throughout and Mak came third in technical, this is the worst miscarriage of Bake Off justice since Manon got sent packing two years ago. You have three bad rounds, you go home, that’s the law.” Rowan himself is similarly amazed. Having watched it back though, I’m a bit less outraged on Mak’s behalf. It’s clear that Mak did have two very poor rounds and he failed to fulfil the “moulding” brief in the final one so I can see logic behind picking him. However, he came third out of eleven in technical and was told his macaroons were “Absolutely excellent” and at this stage in the competition one good bake should be enough to keep you in, as there will always be somebody with three bad ones this early on. Anyhow, onwards and upwards as we roll on to bread week!
